Cajuns are famous for for many things such as their unique dialect, their music, their live life to the fullest motto, and of course their cuisine. Cajun cuisine is a very old version of french cooking that mirrors their ingenuity, creativity, adaptability, and survival began in the Southern parts of France. Which they brought with them when they traveled to Nova Scotia, and after their expulsion when they brought their style to Louisiana. They are seen as colorful people, which can be seen in their herb and spice influenced dishes. Though known for being seasoned, which is sometimes mistaken as spicy remember “Cajun” and “hot” are not synonyms. Along with their heavy handed seasoning they are also known to throw everything in one pot and cook. Those meals usually contain penetrating flavor of seafood and game. Along with their one pot meals the Cajuns were known to used every part of the animal, even the bone was used to cook in some places. Though known for all of these culinary reasons they are also known for the saying “joie de vire”, joy of living as they were live in the moment, happy people. The Cajuns were known for other things though, like being the backbone of Louisiana’s oil and gas exploration and production industry. That is because when oil was first discovered approximately 5,000 Cajuns were hired as they already had experience. They now enjoy old fashioned crawfish boils along with laughter and cooking to past time. Though known for oil and seasoning the people of Louisiana saw them as no more then one of, if not the biggest cuisines to impact Louisiana Cuisine. This is said because Cajun Cuisine is not only seen as a first cousin to creole cuisine but as teacher, as the Cajuns taught the Creoles cooking techniques.
