To cook Chinese food, they use thousands of spices. It is impossible in most countries that collect all of spices that they use, so they also have to make some changes. China is a very big country, so they eat Chinese food of different tastes depending on which part of China they live in. People who live in the West-South tend to like more spicy food compared to people in the east. People in the east like to eat non-cooked (raw?) food which means they do not use many spices. It is true that even in one country, they prefer different tastes, so it is a different food when it comes to a different country.
