A worthy way to describe sushi would be, simplicity with great finesse. The way that the precisely cut piece of fish sits effortlessly on the perfect amount of white vinegar rice reflects great minimalism, but only a great chef would recognize the refinement that goes into creating such a masterpiece. It’s hard to believe that something so simple could be packed full of different flavors. The speed at which he was preparing food was phenomenal, but surprisingly it did not affect the quality. Order receipts came in as fast as food left so there was never a point which the chef was being rushed. As the two chef’s prepared foods they also managed to keep the workplace clean and organized. Everything had its’ place and served a purpose. I was amazed by the efficiency of the two chef’s and how organized they kept the work stations. He gave the dish to me and I was astonished by the presentation and amount of elegance that Sam was able to put onto a simple dish.
