Chicken Avocadoes Lime Soup
Homemade chicken avocadoes lime soup, doesn’t that sound Delicious! This simple, yet filling dish can serve a family of six. The preparation time takes roughly fifteen minutes and cook time is approximately twenty minutes. Soup recipes are usually a very simple dish and the magic happens on the stove over the fire. This is a very easy meal to make even after a long day at work. Before you can start the cooking process you must gather all the essential ingredients and cooking material. I get my produce from HEB because it has the freshest vegetables in the city. Ingredients needed to make the soup are as follows: 1 ½ pounds of skinless free range chicken breast, 1 tablespoon olive oil, 1 chopped green onion, 2 crisp fresh jalapenos, 2 cloves of garlic, four (14.5 oz.) cans of low sodium chicken broth, 2 firm large roman tomatoes,

Place the pot on the stove and heat one tablespoon of olive oil. Make sure the heat is on medium. Once the oil is hot add the green onions and jalapenos. Sauté them until they are tender which will take approximately 2 minutes to cook. While sautéing the vegetables add the minced garlic during the last 30 seconds. Once that is done you will add the 4 cans of chicken broth, tomatoes and cumin to the pot then stir with a large spoon. Season with salt and pepper to taste and add the sliced chicken breast. Bring the mixture to a boil over medium-high heat then reduce to medium heat. Cover with lid and allow it to cook for 10-15 minutes. In the meantime, stir the soup occasionally until it has cooked through. Cook time may vary based to the thickness of the chicken. Once the chicken is cooked, remove it from the pot and let it rest on a cutting board for 5 minutes while the soup is still cooking. When the chicken has cooled down enough, begin to shred it and place it back into the soup. Then stir in the fresh cilantro and the fresh lime
