They can be found eating tacos, chips, burritos and many other favorites menu items. Much like Mexican food, people also enjoy Tex-mex food. The following paragraphs will explore the history, food, and regions of these two food types. Food from Mexico is famous all around the world for thing like chips, tacos, enchiladas and so much more. The Mayan Indians were a huge influence on Mexican food. The most common foods grown there are corn, beans and chilies. In the pre-Columbian time corn was the most popular food. Hunting games include javelins, rabbits, quail and deer. Some types of Indian groups also hunted turkey. Planted food included, nopales, pitahayas and cacti. They also had century plant, sotol plant, lechuguilla and mesquite. The Spaniards showed the Indians new crops including wheat and animals including goats, sheep, pigs and cattle. The Indians used to eat corn with every meal. In looking for regions where anyone is able to find Mexican cuisine, people will discover many regions each with their own unique characteristics. According to the website, Menuism, there are seven regions of Mexican cuisine. The seven regions include Northern Mexico, Oaxaca, Chiapas, Central/Western Mexico, Yucatán, Veracruz and Mexico City/Puebla. Food they serve in Northern Mexico are Queso fresco, Arrachera, Pan de Semita, Machaca, Cabrito and Capirotada. In Oaxaca they serve Mole Negro, Mole Coloradito, Mole Chichilo, Mole Verde, Queso Oaxaca, Empanadas, Hoja Santa, Tlayudas, Mole Amarillo, Mole Manchamanteles, Mole Rojo, Enfrijoladas, Blandas, Tamales and Mezcal. In Chiapas their special dishes include Simojovel, Chipilín and Pozol. The next region is Central/Western Mexico. Central/Western Mexico food has Corundas, Morisqueta, Cotija, Tortas Ahogadas, Bionica, Menuda, Churipo, Carnitas, Birria, Pozole and Chilayo. While each region has dishes that they are known for, all of them have many ingredients that are the same. The main region where people can find Tex-Mex food is in Southern United States in the state of Texas. As people began to like Tex-Mex food, it started to expand all around the United States both in restaurants and kitchens. Some of the most common Tex-Mex dishes include Chili con carne, Chimichangas, Hard- shell tacos, nachos, Chili con queso, fajitas, Margaritas and tortilla chips. There are both similarities and differences in Mexican and Tex-mex food. One example of this is the queso. Queso in both regions have a type of cheese. Queso in Mexican dishes are white. Queso in Tex-mex is yellow because they add different ingredients. Another similarity is that they both serve burritos. Burritos are wrapped in a tortilla when served. Mexican tortillas are made from wheat while Tex-mex tortillas are made from flour. Another similarity is the ingredients that they use. Tex-Mex uses a lot of beef, yellow cheese, wheat flour, black beans, canned vegetables, and cumin. These ingredients are not used much in authentic Mexican dishes. Whether people are walking into a Mexican restaurant or a Tex-Mex restaurant, people will find many similarities in the atmosphere but each has specific characteristics of their own. When walking into either type of restaurant, it feels like a celebration.
