Orange juice is a common drink that many people drink. It has a pH of around 3.80 and a sugar content of 11.8 grams. What some people don't know is that each component in orange juice effects each other. The temperature at which orange juice is stored at changes the pH level, and the change in pH level affects the sugar content in the orange juice. There are multiple ways to measure the pH levels of liquids. However, for this experiment I will be using the method litmus paper, or pH strips. Litmus paper is a strip of small paper that has been submerged in a combination of dyes that change their color based on what the pH measured of that liquid is. For example, if the liquid that is being measured is acidic (pH below 7) then the paper strips will be turned red. A hydrometer can be used to measure various things. It can be used to measure specific gravity of liquids, Baume scale for chemistry, and for this experiment, Brix scale for fruit juices. The Brix scale is in degrees of brix. This means that if a substance has a 10° Brix, then the substance has 10 grams of sugar per 100 grams of a solution. So to calculate the amount of sugar in a substance, the Brix temperature number measured, like 10°, would be the degree number but in grams. “The invention of the instrument is credited to Hypatia of Alexandria in the latter part of the fourth century or early fifth century.” When using a hydrometer, the liquid being tested must be put in a container that is taller than the hydrometer. The hydrometer than is put into the liquid so that it is floating and not touching the bottom of the container.
