When food trucks were first established in the late 19th century, they sold simple foods such as sandwiches. In the 21st century, these businesses have become much more sophisticated. Some specialize in a certain cuisine, such as Korean or Portuguese, while others focus on cupcakes (Engber). Because of the relevance of food trucks in today’s society, it is worthwhile to understand their history, how to start one, the different types, and how they are helping to feed the hungry.
