Popular Mexican Cuisines And Drinks “Spanish food is gross, nobody likes mexican food it’s pure garbage,” said by people that hasn’t experienced pure mexican food only the mexican food they eat in America. I’ve interviewed 15 people from my family and they all agreed that authentic mexican food is better than in American made mexican food. I would be going through the history of 2 of these authentic mexican cuisines and a popular drink amongst mexican people. Also the history of pozole, tacos al pastor, and the famous mexican drink horchata. It’s a dish served well warm. In this article it shows the ingredients for pozole “ it is made with pork, hominy and has either a red or green color depending on the chiles used for the soup base. Other variations also exist using chicken, beef, seafood, beans and there’s even a white pozole. The pozole is served alongside shredded cabbage, onion, radishes, lime, oregano, salsas, sour cream and tostadas” (Lopez-Mchugh). This dish is a classic a family favorite for us, we rarely eat the dish but when we do you know it’s a party! Now what we are here for is the history of this classic dish, well in this article how this dish started is pretty disturbing, “One of the main components of pozole is the hominy, which is basically processed maize or corn. Aztecs, and the other indigenous peoples Mesoamerica, cooked pozole only on special occasions. Now this is where things start getting weird and a bit gross. In a book called “General History of the Things of New Spain” written by (Bernandino) ,he describes pots of stew with corn and pieces of human flesh being eaten on special occasions. The human meat came from the sacrificed people, whose hearts were ripped out and offered to the gods, their bodies were chopped up and cooked in the pozole.
