It is related with the cuisine of eastern, central Europe, especially Russia, and other countries which is a style or a method of cooking. It can be either served hot or cold and it is mainly a soup. We can say that this is a soup of Ukrainian origin usually served as an appetizer. The main ingredients in the borsch is beets along with vegetables.

What is significant about this meal, Zaroff’s meal when we first met him was Zaroff 's having this borsch, "the rich, red soup with sour cream so dear to Russian palates" (page 3) indicates his strong ethnic traits as well as his hearty appetite. This meal is significant to the character, Zaroff. The significance of General Zaroff eating it when he and Rainsford first meet is that it is symbolic of his blood-thirstiness. This means that he kills for sport, and now that hunting animals is no longer a big enough challenge for him, and now he hunts men. At this point, we come to realize that Rainsford has no idea at this point in the story that Zaroff has a taste for blood, and that he is supposed to be the next victim.
