Mickywich is a nutrient-rich delicious multi-grain sandwich cookie with a soft layer of dehydrated berry leather. Each serving of Mickywich consist of 2 sandwich cookies weighing 59 grams (150 total calories). These cookies primarily contain multi-grain flour, jaggery and brown rice protein powder. Multi-grain flour provides 5grams of dietary fiber per serving (20% DV) making the product fiber rich. Jaggery is an amorphous form of unrefined and non-distilled sugar prepared from sugarcane juice and is used as sweetener which contains traces of mineral salts beneficial for health and iron which can prevent anaemia. Multi-grain cereal comprising of oats, barley, wheat, rye and triticale is shear blended to multi-grain flour. Multi-grain flour, powdered jaggery and brown rice protein powder along with other additives – baking powder, carrageenan gum and soy lecithin are added and mixed thoroughly. Wet ingredients – vegetable oil, vanilla extract, glycerin, skim milk and water are received, added to dry ingredients and mixed to form cookie dough. The dough is moulded using Micky and Minnie dies and baked at 275 ºF for 7 minutes. Parallel to the above process, fruit berries – strawberries, blueberries and raspberries are washed and blended separately. Berry puree is poured into dehydrator trays and is dehydrated separately at 135 ºF for 8 hours. After dehydration, the berry leather is cooled to room temperature and cut into Micky and Minnie shapes. The berry leather is sandwiched between the cookies and sent for packaging. Each package contains four Sandwich cookies, contributing to two servings per package. Once packaged, the packets are screened for metal detection.
