Cranberry, Orange & Ginger Punch

Ingredients:

1 package (12 oz.) frozen cranberry juice concentrate
3 cups water
1 liter orange juice, chilled
2 liters dry ginger ale, chilled
2 cups ice cubes
2 oranges, segmented

Directions:

* In a large punch bowl, combine juices.

* Add chilled ginger ale and mix well.

* Add ice cubes and orange segments just before serving.

How to segment an orange: Peel orange and remove as much white pith as posible. Cut down between each side of each segment, close to membrane which divides each segment.

Note: This punch also makes a great party drink if mixed with vodka.

Pineapple Lemonade
Ingredients:

1 large pineapple
4 large organic lemons
2 cups organic cane sugar
6 cups water

Peach Bellini
Ingredients for Drink:

2 large peaches, cut into chunks
1/2 cup organic cane sugar
2 teaspoons fresh organic lemon juice
1 bottle Champagne or sparkling wine

Garnish:

1 large peach, cut into 6 slices
6 sprigs mint

Directions:

* Combine peach chunks, sugar and lemon juice in a bowl. Allow to rest 30 minutes.

* Place peach mixture in a heavy saucepan and bring to a boil, stirring until sugar has dissolved. Reduce heat to low; cover and cook 15 minutes. Remove from heat and allow to cool. Pour through a strainer, pressing solids to extract flavor and juices. Chill. Discard any solids.

* Place about 1 tablespoon peach syrup in each flute and fill with Champagne. Garnish with a peach slice and mint sprig.

Makes about 6 servings.

Irish Coffee

Ingredients:

1 cup double strength hot coffee (your favorite blend)
1 ounce Irish whiskey
2 teaspoons organic cane sugar
Whipped cream or Irish Whip for topping

Garnish:

Cocoa or cinnamon powder to taste

Directions:

* Prepare double strength hot coffee.

* Add 1 ounce Irish whiskey and 2 teaspoons sugar to each cup double strength hot
