According to Bacardi Limited, it is the largest privately held spirits company in the world and produces and markets a variety of internationally recognized spirits and wines. In the city of Santiago de Cuba, a family purchased a distillery and revolutionized rum-making on February 4,1862. In 1862, Bacardi was found by Don Facundo Bacardi Massó in Santiago de Cuba. Bacardi has been owned by seven generations of Bacardi family members (Bacardi Limited). Bacardi premium rum, is the first sample of a smooth, light-bodied spirit originated from tin-roof distillery with bats in the rafters. Facundo changed the rum making process by including the isolation of a single strain of yeast from nearby sugarcane fields (Bacardi Limited). As stated by Bacardi Limited, this ingredient is still used today and it is still the world’s favorite rum. Cuban and Spanish people said a bat symbolizes good health, good fortune and family unity. Don Facundo’s wife, Doña Amalia spotted fruit bats in the family’s distillery she suggested that it should be Bacardi’s symbol. Later, it became known as “the rum of the bat”. El Coco, a coconut palm planted prominently at the opening of the distillery by the founder’s son was another Bacardi symbol.
