From the 1950’s stereotypes of a woman’s role in a kitchen to today’s awkward double takes at working mothers with stay at home fathers, gender roles continue to play a part within the home environment. It is commonly assumed that men go off to work in the morning and come back at night to a clean house and a steaming plate prepared by his wife; however now a days, not only are families moving towards TV dinners and eating fast-food options on their evening commutes, but the role of taking care of the home and preparing meals has shifted to the role of the men. Within the restaurant itself, they have hosts, severs, bartenders, busboys, and the entire kitchen staff. Generally, hosts are female while the severs and bartenders are about 50% male and 50% female. The busboy position, however, is solely male regardless of the size or skill level of the female in question. Although the position of host is available to both sexes, the majority of males hired soon get ‘promoted’ to busboy, while the females remain stagnant in their role. This highlights the cooperation’s outlook on female and male ability downsizing a female’s strength and endurance in a fast paced environment. Since customers may prefer a male server to a female server or vise versa, the wait staff is kept at equilibrium. General manager David Bustillo during his interview described, “male customers tip our male and female wait staff approximately the same; however, female customers will tip the female wait staff about 50% less than they would a male counterpart.” As a manager, it would be logical to hire more men because of this. At this Tex-Mex grill, the kitchen doesn’t lean towards a gender either. In fact, the kitchen staff as a whole is composed of a single Hispanic family, so the flow of food is fast, clean, and any conflict is kept to a minimum. Anthony Bourdain stressed how important this is especially in tight courters with knives and hot open flames.
