“Gluten free in Afghanistan” is a fairly new book published in 2012 by Captain Donald Andrasik who served in the Army National Guard. In the book Andrasik shares his story of maintaining a gluten free diet while being overseas fighting at war in Afghanistan. In “Gluten Free Soldier in Afghanistan” by Amy Ratner she breaks down Andrasik’s book and reviews it while expressing her thoughts throughout her article. Ratner graduated from Penn State University and is currently a member of Beyond Celiac, a nonprofit organization that unites with patients and partners to drive diagnosis, advance research and accelerate the discovery of new treatments and a cure. The Ve’lodrome d’Hiver Roundup refers to the period of time when French police (Nazi directed) rounded up 11,000 people with a Jewish background, and put them in a winter, and bike stadium , called Ve’lodrome d’Hiv. Within one week the number of Jewish people stored there went from 11,000 to 13,000, 4,000 of them being children. The people being held were left extremely crowded, with almost no food, water, or sanitary rooms. The Jews were actually warned months before the arrests, but since most arrests usually targeted Jewish men, the women and children did not go into hiding. Children between the ages of 2 and 16 were arrested with their mothers.

The book states clearly that the Ketogenic Diet cannot be approached lightly. It requires total commitment and discipline of the parents. The meal preparation needs are time consuming, precise and constant. It is essential to have the Ketogenic Diet managed and supervised by a neurologist and dietician, because despite the amazingly positive outcomes for 60% of people using the diet, significantly children, there are potentially serious side affects which need regular and constant monitoring. Celiac disease is a disease that affects at least 3 million Americans including myself. A gluten free diet is often written off as a fad diet but for those living with Celiac, it is anything but. This disease affects your daily life, physically and mentally. I chose this disease because it affects me personally (and my mom and granddad) and many people don’t understand or simply don’t want to understand what Celiac is. Celiac disease is an immune disorder where people can’t tolerate gluten (gluten is wheat, rye, barley, and is mainly in bread products but is also used as a filler for many other food items) because it damages the inner lining of their small intestine.
Amyotrophic Lateral Sclerosis, or ALS, was discovered in 1869 by a French neurologist Jean-Martin Charcot. Today this disease is commonly referred to as Lou Gehrig’s disease, after the famous baseball player who suffered through ALS. ALS is a progressive nervous system disease where the nerve cells break down impacting bodily functions. The disease affects the motor neurons that provide voluntary movements and muscle control. Those who are diagnosed with ALS will eventually lose their ability to eat, speak, move and breathe.

Celiac Disease is a disease that occurs in your stomach and intestines. There are these things called Villi in your small intestines, they are like almost hairs, to absorb the food and protein. When a Celiac eats the slightest speck of gluten; a protein found in wheat, barley, malt, oat and flour the body sends out an immune response and kills all the Villi in the small intestine. Some symptoms can be anywhere from pain in stomach, to rashes, to even if untreated Cancer.

The first thing you see are chicken nuggets, then you remember you can’t eat chicken nuggets because you are allergic to gluten. So you get some mashed potatoes and fruit instead. You want to get dessert but the brownies have peanuts in them and you’re allergic to peanuts too.
After many doctors read this article, gluten free diets were tried by many people, hoping for a change in their health. Consuming gluten was linked to many symptoms such as bloating, stomach pain, nausea, and more. As more people tried the diet and it became popular, the gluten free diet was believed to be detrimental… but also beneficial.
Babies are born with an innate ability to learn and their brain to develop after birth. The neural pathways of a human’s brain are built based on their early experience in the world. A baby’s world is based on how they are treated by people in it therefore if the environment is scary then the baby will be reluctant to explore, as demonstrated n Bowlby’s and Ainsworth’s attachment theory. The brain and body become wired enough to understand what is safe and what should be feared. The birth to 3 years of a child’s life is a critical period for the brain during child development and any deprivation during this will result in persistent deficits in cognitive, emotional and even physical health.
Throughout my power point presentation I found some strengths and some weaknesses I will improve on in the future. Making sure the audience understand the main topic of the presentation is important. When I started my presentation I first introduced the audience to the topic and gave some background information. To make sure that everyone understands what celiac disease is I gave information about the disease so that the audience can have basic knowledge about what gluten is. On the other hand I also found a few issues I can and will improve on in presentation to come.
