“Gluten ataxia” is a gluten-triggered disease whose primary symptoms occur in the brain (Velasquez-Manoff par. 20). This proves that certain proteins on neurons structurally resemble proteins in wheat. For example, if the immune system attacks gluten, it might also inadvertently pursue brain tissue (Velasquez-Manoff par. 21). This condition damages the cerebellum, located in the back of your head. Damaging of this part of the brain causes loss of coordination and progressive disabilities (Anderson par. 2). To avoid symptoms of gluten ataxia, patients are put on a gluten-free diet.
