The colonials of New Spain brought animals such as horses, cattle, goats, sheep, chicken and pigs. Here Pilcher describes the importance of corn and wheat. He uses very descriptive to show Mexico’s elites love towards dishes based on wheat. He also discusses Mexico’s oldest documents of cookbooks, however, the Europeans heavily influenced them. By insisting on their Spanish blood and the absence of any African blood, some Mexicans were able to claim whiteness and purchase land. Whiteness was thus inscribed in Texas law as the precondition for the rights of both citizenship and land ownership. This construction of whiteness separated white Texans from slaves and laborers of such "mongrel" groups as African Americans and Mexicans. Chapter Two, " 'The Little Brown Man in Gringo Land," details the impact of the legalization of Mexican labor and the relaxing of the Immigration Act of 1917 on farm labor and tenancy in central Texas. Large numbers of Mexicans in central Texas replaced African American and Anglo American tenants and sharecroppers, exacerbating tensions among the remaining white tenants.
By introducing these new traditions on to the people of Mexico they slowly gained popularity and brought different people together. For example Spaniards created a different society to protect indigenous people, they slowly started to
That the Anglo-Saxons were superior to the Mexicans and that God had saved America for people of Saxon blood. Like previous chapter this chapter also delved into the mentality that other races were oppressed because of their own faults rather than the oppression of white people. White American could sleep better at night if the suffering of others was blamed on racial weaknesses rather than on the fact that whites were exploiting these people. In taking Mexican land the whites used the same excuse that they did when taking the land from Indians. The Mexicans had lost because of racial weaknesses and like the Native Americans they couldn’t take care of the land, and that the world would be a better place when a superior race spread further into the southwest.
The Mexican American War started in 1846 because of Mexican resentment caused by the 1836 loss of Texas and the American’s desire for Mexico’s more northern territory. “On September 9, 1847 after two years of fighting, the Mexican American war essentially ended when the American Army captured Mexico City after the Battle of Chapultepec”( 6). The Treaty of Guadalupe Hidalgo ended the war. United States leaders then acted morally superior in their negotiations of the treaty 1. During negotiations, United States officials viewed the “forcible incorporations” (1) of almost one half of Mexico’s land as an “event foreordained by providence and Manifest Destiny” (1).
The harsh conditions the Indians underwent “encouraged the emigration of rural laborers from Mexico to the southwestern part of the United States” (New York: American Geographical Society, 1923). Diaz intervention in the administration of justice sided with the indians (162). He was aware that a large majority of territory was taken from the indians and so, made negotiations with corrupt companies which profited off of these lands. Part of this plan was to give the Indians sale on easy payment terms, irrigation, and education (Eder, 35). Indians were part of the rural population, they had their land taken from them and therefore were repressed.
Both Taco and Burrito were wrapped by Tortillas. The Tortillas of Taco is small and made by corn so it can be called "corn Tortillas". Burrito is wrapped by flour Tortillas instead of cord Tortillas because corn Tortillas is easy to crack and it should be bigger that the Taco's Tortillas.

After taking Mexico City in 1521 the Spanish decided to go north for new lands to conquer and project their own myths onto the unknown region that was to become the southwest.
Erik Alvarez Professor Bogusky December 02, 2015 INTRODUCTION Hello everyone, one of my earliest memories that I have from school is from my first day of kindergarten. My fellow classmates assumed I was asian because of how I looked and teased me to the point of tears. In reality, I am of Guatemalan origin.
Culture is an essential part of a community’s identity, because it links individuals to a collective bond. The Americas have always contained a vast variety of cultural communities, especially in the United States. The US is known for being one of the most diverse nations in the world, housing hundreds of different cultures. Mexican-Americans display a strong sense of a cultural background, which falls as a subset of the bigger Latino culture that links all Latinos. Oral history is a major aspect on the Mexican culture, which contributes to the truth of how history in the United States actually happened.

The Southwestern cuisine was created at the influence of Spanish, Mexican and Native American cultures. This influence took place, especially in New Mexico, but also in Arizona, Utah, Colorado and California. The cuisine that has formed has become iconic to the United States Southwest with having many similarities between Mexican food and a unique twist to it. The beginning of all this food style influence came from the legacy of the Aztecs, who were dining on beans, corn, chilies, avocados and onions. All these foods were present throughout the time, even before the Spaniards arrived in the New World.
