Evaporation is the process by which a liquid changes into water vapor. Evaporation happens most often with warmer liquids because in warmer liquids, there are more active molecules than in cold or room temperature water. Evaporation has to do with the energy in the water molecules because they have to release energy from the molecule in order for evaporation. The average temperature for the liquid might be low but evaporation will still take place over time. Heat from the sun or even a lamp can cause evaporation. The liquid has to be in motion for evaporation to occur in the molecules specifically. The more molecules the more the activity and more evaporation. If the liquid does not have that many molecules from heat or the temperature the liquid will not evaporate as fast as the liquid with more heat and hotter temperature. Molecules at the surface of the cup or bowl have more energy and even if the liquid is colder. They begin to travel faster than the molecules at the bottom of the cup or bowl. The surface molecules escape from the liquid as they collide with other molecules. When you have a sugary drink in the mix, you would think that it would not evaporate, right? But it does evaporate faster than the water because the sugar first dissolves in the the drink than it takes less time for the evaporation process to occur.
