I am a freshman at Rutgers University, The State University of New Jersey, in New Brunswick. As a Cell Biology and Neuroscience major, I have given my health upmost importance. I had an Omega Blood Test after learning about fatty acids in one of my class and my results indicated that I was Omega-3 deficient. Soon after, I started taking Omega-3 supplements and had foods with high Omega-3. I saw changes in my mood, energy levels, and memory right away. However, it has come to my attention that many more people are deficient in Omega-3, which is the eight highest cause of death in America (Danaei et al., 2009). My proposal “Omega RU” is a starting point to solve this large-scale issue. The goal of this proposal is to knowledge students about Omega-3, its benefits, and the problems deficiency in Omega-3 can lead to. Students will also gain more accessibility to foods with high Omega-3s on campus and in dining halls. It is necessary to have funding for such a start-up project. Your position as the President of The Kresge Foundation, an institute that focuses on improving population health and community prevention of health care problems, is a impeccable funding source for my project. A manner in which this can be done is my including more healthy granola bars. Chia and flaxseeds are high in Omega-3s, and these seeds would be included in the granola bars. Flaxseed oil would be made available as a salad dressing at the dining halls. Studies have proven that EPA and DHA are higher in grass-fed beef than grain fed beef (Daley, Abbott, Doyle, Nader, & Larson, 2010). Similar studies have been shown about grass-fed diary in comparison to grain-fed diary. Thus, all the diary and beef would be replaced with grass-fed items. Rutgers hold numerous crab nights throughout the year, and the dining hall would be asked to include a fish night. During the fish night, salmon, anchovies, and sardines – all rich in Omega-3- would be offered to the students in dining halls. They would be served in a manner that is appetizing to the students and is cooked well. In addition, more leafy greens, such as kale and spirulina, would be made available to the students. Foods in vending machines would be replaced with healthier options, such as AMBO Food’s Omega Cookie, which is rich in Omega-3 and other necessary nutrients. A smoothie bar would be incorporated on campus. People often add foods, which they would not consume otherwise, to their smoothies.
