Before the mixing of cooking styles in the different regions, you could tell what region the food you were eating was from because of the regions’ usage of fat. The type of fat mostly used in the northern region was butter, Italians ate pork fat in the region in the middle of Italy, and the type of fat eaten in the south was olive oil.
