As a community nutritionist, I developed a feel and confidence for how to educate and counsel community members of the Pascua Yaqui Tribe as part of the Diabetes Prevention and Treatment Program. I am a Native American and part of this tribe and therefore was so enthused to be part of their health care team. Being fresh out of college and given only a vague idea of the expectations of the position, I gathered all my available resources and set about the task of independently creating a successful education and counseling program. As I learned the ropes and increased my knowledge base, I felt the need to develop healthy cooking classes for my clients. The goal was to show my clients how to cook delicious, affordable and nutrient dense meals while catering to their specific culture preferences.

As educational institutions, schools are in a pivotal position to accept responsibility in meeting these students nutritional needs. For our community project, our group participated with the BackPack Buddies meal distribution for the Starkville community. During our participation we observed how we nutrition students could help provide and demonstrate healthy meal options and preparations for participating families. In doing so, we had a close observation of what type of families participated in the program and how it impacted these families positively. In conducting our community project we found many needs of the community and its people who are qualified for the Backpack Buddies program.

I knew I wanted to be a dietitian when I was 16 and years old. My mother had health problems due to anemia, needed a blood transfusion and was told that she needed to make diet and lifestyle changes to improve her health. Many of her issues were resolved by a healthy diet, increasing exercise, and losing weight. The ending result not only improved my mother’s health but my own health as well. That is when I knew that nutrition and health was my calling.
If you look back at lunches from decades ago, you’d notice the enormous amount of changes in what schools served then compared to now due to the federal health guidelines, but how have schools dealt with the changes to lunch guidelines now? Over the years, the nutritional program has changed “with the implementation of various nutrition standards and guidelines”. However, as these regulations have become more stringent, schools have found it increasingly challenging to meet the requirements while still offering meals that students find appealing” (Sanchez). Schools now have a hard time keeping up with guidelines and having lunches that students would want. There is to be a balance between having food that is healthy but also good, but with the tremendous changes in federal health guidelines for school lunches, the balance of food is broken.
Do you think restaurants should be required to post nutritional information or should they not have to. Restaurants should be required to post nutritional information. My first reasoning for this is when people have the option to see how much calories are in there food they have a better chance of understanding what they should not eat and what they should eat. My second reasoning is without labeled stuff people would not know how much nutrition or sodium is in there food, and they would not know how much calories to lose if they went to the gym. My final reason is people want to keep up with how much junk food and how much healthy food they ate in one day.

Lack of nutrition education, marketing persuading consumers to want harmful food, and the healthcare system not being effective all have to deal with why healthy nutrition is not being focused on or accomplished.
